The French rules (AOC) prohibit adding sugar and color caramel. Nor must be “fifbles” with age. It is the youngest Rome in the mix that puts the age on the bottle.
The sugar cans are pressed just after they have been harvested and the sugar cane juice. The method came in the late 19th century in Martinique. The sugar prices in the world market were so low, so Homère Clement came with the idea, making Rome of the fresh sugar pipe juice. Not a quality decision, more out of reality.
