Paul Jaboulet Crozes Hermitage Rouge 2019 (ECO) 75 cl.

Domaine Paul Jaboulet Ainé – France

Crozes Hermitage Rouge Domaine de Thalabert is made from organically grown Syrah grapes sourced from the estate of the same name, which has belonged to Paul Jaboulet Aîné since 1834 and is the oldest domaine in the appellation. The vines across Domaine de Thalabert’s 45 hectares are between 40 and 60 years old and yield no more than 25–30 hl/ha. The grapes are hand-harvested and transported to the cellar in small 25 kg crates to avoid oxidation. The wine is fermented in temperature-controlled stainless steel tanks and then undergoes malolactic fermentation followed by one year of ageing in oak barrels.

Crozes Hermitage Rouge Domaine de Thalabert has a deep, dark red colour. The bouquet is profound, with concentrated notes of morello cherries, forest berries, and English liquorice. The palate is equally deep and complex, with flavours of wild plums, spices, liquorice, and tar. The wine has excellent ageing potential. Serve it with lamb, game, or beef, preferably prepared with onions, garlic, and wild mushrooms.
