Signatory Vintage is one of Scotland’s most respected independent whisky bottlers. Founded in 1988 by Andrew Symington, the company is known for selecting characterful casks and presenting whiskies with a strong sense of both cask influence and distillery character. Signatory often bottles with natural colour and without chill filtration, which appeals to enthusiasts looking for a more authentic and unaltered style. Detailed tasting notes
The nose opens with heather smoke, honey and malt, followed by raisins, dates and dried figs. This is joined by orange zest, cinnamon, clove and a lightly nutty note reminiscent of walnuts and sherry-soaked oak. There is also a subtle coastal character in the background, adding lift and freshness to the aroma.

On the palate, it is rich and dense, with a powerful arrival of dark fruit, sherry sweetness and honeyed malt. The oloroso casks bring depth, spice and a gentle dryness of oak, while the soft Orkney smoke adds elegance rather than weight. Notes of orange peel, dark toffee, spice, roasted nuts and a lightly peppery warmth from the alcohol all come through clearly. Despite its strength, the whisky feels balanced, with a well-judged interplay of sweetness, smoke and cask structure.

The finish is long, warming and flavourful, with lingering notes of sweet smoke, dried fruit, spiced oak and a faint salty sea breeze. It is especially well suited to those who appreciate sherry-matured whisky but also want freshness, structure and a more distillery-driven profile than the heaviest sherry bombs.
