Héritage is a cuvée sourced from two tiny plots totalling just under one hectare—one south-facing, the other north-facing. This Chablis spends significantly longer ageing sur lie than Fourrey’s standard version, and as a result it shows greater density, breadth, maturity and complexity. For a modest premium, it offers Chablis enthusiasts simply “a little more of everything.”

The Fourrey family is a small producer working exclusively with Chablis made from fruit grown on their own vineyards. No herbicides are used, and fertilisation is strictly organic.

The wine is also known as Le Vin d’Emile, named after the son, Emile, born in 2012. Vinification takes place entirely in stainless steel, and unlike Fourrey’s basic Chablis, Héritage spends an additional year on its lees, meaning it is bottled after 18 months sur lie.

Aromas and flavours are classic Chablis: dry citrus and green apple, with added complexity from the extended contact with fine lees. This not only brings a subtle hay-like nuance, but also shapes the structure, giving a creamier sense of body and more breadth than the base cuvée. The Kimmeridgian marl soils contribute a vibrant mineral backbone.

Enjoy Domaine Fourrey Chablis at around 10–15°C, depending on preference—ideally not too cold, as the wine then won’t fully express its qualities.

Try it with a fish dish—especially flatfish or cod—served with a simple, flavourful sauce such as beurre blanc or hollandaise. Light meat dishes are also a natural match, as long as the food isn’t overly rich or heavy.
