Chianti “Biskero” is composed of the region’s three classic grape varieties: Sangiovese (85%), along with equal parts of Canaiolo Nero, Mammolo, and Merlot. The grapes are grown according to organic and biodynamic principles in the vineyards “Poggio Piglia” (9 ha.) near Chiusi, “Abbadia” (8 ha.) in Torrita di Siena, and “Greppo” (8 ha.) in Abbadia di Montepulciano. While fermentation takes place in stainless steel tanks, maturation (4 months) is carried out for 70% of the wine in stainless steel and the remaining part in 300-liter American oak barrels. After bottling, the wine is further aged for 3 months in the cellar before release.
The wine shows a beautiful bright red color. On the nose, it is immediately fresh and fruity, with notes of raspberries and cherries. The palate highlights freshness and crispness – again with vivid red fruit tones – while also offering good structure and richness. The finish reveals a slightly spicy note, which is classic for Chianti. A refined and harmonious wine!
This is a wine best enjoyed in its youth. Although it pairs well with slightly heavier dishes such as lamb and beef, it is at its finest with roasted poultry, veal, pasta dishes, or simply on its own, where its fruit and finesse can truly shine. Serving temperature: 18–20°C.

Salcheto, with its 74 hectares of vineyards, belongs to the smaller wineries of Montepulciano, yet it has made a strong mark in recent years. The estate was founded in 1991 with an ambitious vision: replanting Sangiovese cuttings from its own massal selections, maintaining low yields, and committing to organic cultivation.

Today, the vineyards are mainly planted with the local grapes Prugnolo Gentile (Sangiovese) and Canaiolo, cultivated under strict organic and biodynamic practices. Since the 2011 vintage, Michele Manelli (owner and cellar master) and his team have used a state-of-the-art off-grid cellar, which consumes 54% less energy. Their dream of achieving CO2 neutrality is becoming reality, making Salcheto a true pioneer in sustainable winemaking. In fact, they proudly state: “We are proud to be the first company in the world to have certified the carbon footprint of a bottle of wine (according to ISO 14064 standard, in 2011).”
Beyond sustainable production, Salcheto has for over a decade strived to be a “good citizen” in the global community. Through Italy’s “società benefit” registration, the company has made this mission part of its bylaws, legally committing the management to contribute to social good and report on its progress. Today, Salcheto is a nonprofit enterprise and, since July 29, 2021, officially bears the name “SALCHETO S.r.l. Società Agricola Società Benefit.”
