This is a Danish single cask release from the 2004 vintage, bottled at cask strength 66.8%, giving the rum an intense, energetic, and highly characterful expression.
How it tastes The nose is intense and expressive, with notes of lemon peel, candied orange, sesame seed, green grass, and apple. On the palate, it is creamy and full, showing unusual and layered hints of Greek yogurt, turmeric, seawater, cinnamon, and molasses. The overall impression is dry, powerful, and complex, with clear structure rather than sweetness.
How and by whom it is produced This rum is a single cask from South Pacific Distillery in Fiji, made from molasses and aged in bourbon casks. Danish retailer information states that it first underwent initial maturation in Fiji before further ageing in France, and was then bottled in April 2016 as cask no. SF15. The outturn is 234 bottles for Denmark. It is bottled by Compagnie des Indes, a French independent bottler founded in 2015 by Florent Beuchet, focused on selecting rums from different origins and refining them in France.
