El Frizzante from Cascina Albaterra is a lightly sparkling natural wine in a classic Italian frizzante style—fresh, easy-going, and made to work just as well as an aperitif as it does with food. The bubbles are soft and lively (more of a gentle “spritz” than a strong mousse), giving a bright, thirst-quenching feel without taking over.
The producer – Cascina Albaterra
Cascina Albaterra is more than a winery—it’s an agricultural and social project with a strong connection to nature. Alongside wine, they also grow vegetables and keep animals such as sheep and goats. The project is based in the Soave area of Veneto, in the green hills at the foot of the Lessinia plateau. A key part of the story is that the vineyard—around 1 hectare of Garganega—has been made possible through support and access to land in the area, working with local partners.
Style and winemaking
El Frizzante follows a hands-on natural wine approach: the wine sees short skin contact, fermentation starts spontaneously with native yeasts, and the wine is neither fined nor filtered. Its gentle sparkle comes from a second fermentation in bottle, kick-started with grape must—a traditional method that creates a lively, slightly rustic, and charmingly “natural” style.
Taste & feel in the glass
In the glass it’s crisp and refreshing, often showing citrus, green apple, and pear, sometimes with a light floral touch. The overall style is dry to lightly fruity, with bright acidity and a clean, snappy finish. There’s often a subtle natural texture that makes it extra food-friendly and distinctive.

Serve well chilled at 6–8 °C, ideally in a standard white wine glass. Great with antipasti, charcuterie, olives, and salty snacks, and also a brilliant match for pizza, pasta, salads, plus fish and seafood—especially with lemon and herbs.
