Anker Chokolade was founded by Martin Nørregaard and Mikkel Anker in 2015.
Anker Chokolade is a fusion between a Michelin chef and chocolatier – Mikkel Anker – and a food lover with a passion for running a business – Martin Nørregaard. With our diverse backgrounds, we bring unique perspectives on how to create a great product. Mikkel’s background in hot cuisine and Michelin restaurants gives us a different approach to conventional “approved” chocolate flavors. We do not feel restricted by the concept of “That’s how it’s always been done” but allow ourselves to think creatively and challenge the typical flavors found in chocolate. We work diligently to develop the flavors in each piece of chocolate, making sure they not only taste good but look enticing, as we believe that people also eat with their eyes.
The story began back in December 2015, when we opened our first store in Vesterbro. In an old basement, we spent the summer renovating and establishing a chocolate workshop, which was finally ready to welcome guests on December 17, 2015. Locals could come into the shop and watch the chocolate being made. Since every journey has a beginning, our opening hours at first were primarily in the evenings and weekends, as Anker Chokolade was our side project alongside full-time jobs and evening studies. When demand gradually increased, after a year, it was time to take a bigger leap and devote even more time to Anker Chokolade. We decided that Mikkel should go full-time to keep up with demand – and things moved so quickly that Martin joined full-time just half a year later. Thus, we transitioned from full-time jobs and evening studies to focusing 100% on Anker Chokolade.
THE CONCEPT
At Anker Chokolade, we strive to challenge your taste buds with our unique range of chocolates. Our selection changes with the seasons, meaning we work with two collections – a Summer Collection and a Winter Collection. We believe that ingredients are at their best when used in-season, which is why we replace 2/3 of our assortment every six months, ensuring a constant pursuit of excellence. Our core idea is to enrich the traditional chocolate market by introducing new and exciting flavor combinations, thus pushing the boundaries of which ingredients can be paired with chocolate.
WE LOVE THE CRAFT
Since we believe that chocolate-making is a craft, we have chosen not to buy large machines that can produce a vast quantity of chocolates in an instant. We believe that love should be part of the production process, which is why all our products are handmade. This includes everything from decorating the chocolates – often painted by hand with brushes – to casting the shells and filling the chocolates; everything is crafted by hand. You can see our craftsmanship in our stores, where production takes place. If you’re interested in watching how our production unfolds, you are naturally welcome to visit during the day, as that is usually when production is ongoing. The fact that production happens in-store also adds authenticity and a fresh chocolate aroma, ensuring there is no doubt that you are in a chocolate shop.
