Highlands Provence
With soil rich in minerals, 300 sunny days a year, and cool Mistral winds, this corner of Provence offers the ideal growing conditions for the Grenache, Syrah, and Cinsault grapes that are all included in AIX rosé. The vineyards are located 420 meters above sea level, making them some of the highest vineyards in the region. The grapes benefit from cooler nights and a greater influence from the Mistral wind, which dries the vines on dew-laden mornings, making the sun-ripened grapes healthy and flavorful.
Rosé Harmony
The winery’s 50-60-year-old Grenache vines provide high flavor intensity in the wine, while grapes from younger vines ensure freshness. To preserve this harmony, Maison Saint Aix follows a thorough replanting plan, replanting up to 4 hectares of vines per year. The grapes are harvested in the late hours of the night to ensure freshness, and the wine is fermented and aged in temperature-controlled steel tanks.
