The hearts of the agave plant – known as piñas – are traditionally roasted in earth ovens for up to eight days. This process imparts the mezcal’s distinctive smoky aroma. After roasting, the agave is crushed using a tahona, a heavy stone mill pulled by a donkey, and fermented in open wooden vats with naturally occurring wild yeast. The distillation takes place in copper stills and is repeated twice to achieve a clean and balanced spirit.
On the nose, you’ll find roasted agave, eucalyptus, fresh citrus notes, and a hint of wild herbs. The flavor is mild and rounded, with nuances of green mango, hay, fresh grass, and a gentle, elegant smokiness. The finish is silky smooth with a fresh, herbal touch.
