From a single cask, this Caol Ila, distilled in 2011 and bottled at its natural strength of 60.7%, has aged for twelve years in a first-fill ex-Sherry cask. Hidden at the foot of the cliffs near Port Askaig on Islay’s east coast, Caol Ila is known for producing maritime whiskies with an elegant and lingering peat smoke.
On the nose, aromas of fruitcake, dark chocolate, buttery malt, and licorice. On the palate, notes of dark chocolate truffles, orange, lime, autumn bonfires, sweet pastries, licorice, and bacon.
Tasting Notes
Nose: Tropical fruits, dark chocolate, baking spices, coastal smoke.
Palate: Spiced fruitcake with notes of candied pineapple, salted dark chocolate, dates, dried orange, lime, bacon, and peat smoke.
Finish: Layers of seaside smoke, bonfire embers, sweet fruits with warming spices.
