Scallywag The Winter Edition – Ice Wine Cask Finish 2025, 52.4% is a limited Speyside blended malt crafted from 100% Speyside single malts. Initially matured in selected oak casks and then finished in rare ice wine casks from Eastern Europe, it’s bottled at natural cask strength 52.4%, non-chill filtered and with no added colouring – a bold, sweet and spicy winter dram.

Bottled by Douglas Laing as part of its Remarkable Regional Malts range, Scallywag showcases classic Speyside character: juicy fruit, honeyed sweetness and warming spice. For the 2025 Winter Edition, the ice wine cask finish adds an extra layer of sugary, wine-like fruit and wintery charm, without losing the bright orchard-fruit core.
Nose
The nose is crisp, sweet and inviting:
fresh orchard fruits – apples and frosted pears
sweet vanilla, honey and soft white chocolate
gentle vinous notes from the ice wine and a halo of winter spice
Palate
On the palate, the whisky is rich, mouth-filling and warming:
lashings of honey, light syrup and creamy vanilla
candied orange, citrus peel and ripe orchard fruit
baking spices – cinnamon, nutmeg and a hint of clove and pepper
a subtle winey sweetness from the ice wine casks, adding depth and complexity
Finish & serving
The finish is long, cosy and satisfying:
lingering cinnamon, dark chocolate and roasted nuts
warm honey, gentle oak spice and a soft, wintry freshness right at the end
Best enjoyed neat in a tulip glass, with a little time to breathe. A small splash of water helps to unlock extra layers of fruit, honey and spice. It’s an ideal fireside dram for the colder months, and a great match for dark chocolate, roasted nuts or rich winter desserts.
