Orkney 18 Years (HP) Signatory is a powerful, sherry-heavy island single malt from a “secret” distillery on Orkney – most likely Highland Park. The whisky has been matured for 18 years in a single first fill Oloroso sherry butt and bottled at natural cask strength, without chill filtration and with no added colour. This gives an extremely concentrated character, showcasing both the sherry cask and the classic Orkney style with gentle peat smoke and heather notes.
Flavour profile
Appearance: Deep amber to dark mahogany, with thick legs in the glass indicating long maturation and high viscosity.
Nose: Rich sherry aromas of raisins, prunes, dark berries and dates, along with orange peel, caramel, honey, roasted nuts and dark chocolate. Beneath it all lies a subtle strand of peat smoke, heather and a hint of coastal breeze.
Palate: Full-bodied, oily and intense, with layers of black cherries, dried fruits, sultanas and dates, joined by caramel, coffee, cocoa, spicy oak and a fine, sooty smoke. Heather, herbs and a touch of saltiness tie the flavours together.
Finish: Very long, warm and winey, with lingering sherry sweetness, dried fruits, spices, toasted wood, cocoa and a dry, elegant smokiness that stays with you.
Serving suggestions Enjoy Orkney 18 HP Signatory neat in a tulip-shaped glass. A few drops of water can further open up the dried fruit, chocolate and smoky notes. It pairs beautifully with dark chocolate, nut-based desserts, robust cheeses or a fine cigar.
