Peardise – Poire au Cognac is a pear liqueur created by the Cognac house Godet, a family-run producer with coastal roots in La Rochelle and a long-standing tradition of blending and cask-driven style. Because Godet is fundamentally a Cognac house, the result feels more “grown-up” and vinous than a typical fruit liqueur: ripe pear is supported by Cognac warmth, structure, and a refined finish.
How it’s made (in practice)
It starts with ripe pears, with aroma and fruit character captured through gentle extraction/maceration to keep the profile fresh and juicy rather than jammy. The fruit base is then blended with the house’s Cognac, adding depth, roundness, and a subtle cask-spice note. After blending, the liqueur is rested to integrate fruit, sweetness, and Cognac character, then filtered and bottled. The end result keeps pear at the centre, while Cognac provides warmth, spice, and a soft oak-toned backbone.
Flavour profile
Clear ripe pear with layers of vanilla, caramel/toffee, and gentle spice. The Cognac element brings a longer, smoother finish and a more refined balance than a straight fruit liqueur.
Serving and use
Serve well chilled, ideally over ice, as a digestif or “dessert in a glass.”
In cocktails: excellent in a Pear Old Fashioned riff, a Sour (pear + citrus), or as a pear lift in a tall drink with soda/ginger ale.
Pairing: great with pear desserts, vanilla, nuts, and even blue cheese.
