High West Distillery grundades 2006 av David Perkins och hans fru Jane. David \u2013 en f\u00f6re detta biokemist \u2013 blev inspirerad att \u00f6ppna sitt eget destilleri efter att ha sett parallellerna mellan j\u00e4snings- och destillationsprocessen och sitt eget arbete inom biokemi under en resa till Maker’s Mark Distillery i Loretto, Kentucky. 2004 flyttade David och hans familj till Park City, Utah f\u00f6r att b\u00f6rja sitt nya \u00e4ventyr, d\u00e4r de b\u00f6rjade destillera 2007. De valde Park City p\u00e5 grund av Davids k\u00e4rlek till Gamla V\u00e4stern och Utahs ok\u00e4nda whiskyhistoria.<\/p>\n
High West Distillery b\u00f6rjade med en liten 250 gallon destillation och ett bes\u00f6kscenter i salongen. Det som en g\u00e5ng var en liten verksamhet i centrala Park City har nu vuxit till ett internationellt erk\u00e4nt varum\u00e4rke med fyra unika l\u00e4gen. 2015 \u00f6ppnade High West sitt destilleri i Wanship, Utah, som fungerar som en plats f\u00f6r whiskyprovning och destilleriturn\u00e9 och som idag rymmer en 1600 gallon pot still.<\/p>\n
