The hearts of the agave plant \u2013 known as pi\u00f1as \u2013 are traditionally roasted in earth ovens for up to eight days. This process imparts the mezcal\u2019s distinctive smoky aroma. After roasting, the agave is crushed using a tahona, a heavy stone mill pulled by a donkey, and fermented in open wooden vats with naturally occurring wild yeast. The distillation takes place in copper stills and is repeated twice to achieve a clean and balanced spirit.<\/p>\n
