Sanaig combines both oloroso sherry hogshead finishes and fully matured casks. The distillery sources all their sherry casks from Jos\u00e9 y Miguel Mart\u00edn, with the consistency of these casks highlighted at the higher strength. Cask strength Sanaig offers an incredible blend of rich peat smoke and sweet cooked fruits with a deep, long-lasting, glutinous finish.<\/p>\n<p>70cl at 57.8% alc.\/vol. Non chill-filtered, natural color.<\/p>\n<p>APPEARANCE<br \/>\nDeep tawny.<\/p>\n<p>NOSE<br \/>\nToffee sweetness and dark fruits with red berries and smoked oak.<\/p>\n<p>TASTE<br \/>\nIntense sweetness and spiced dark chocolate with raisins, licorice, and warming rich peat smoke.<\/p>\n<p>FINISH<br \/>\nLingering sweetness and spices with integrated smoke throughout.<\/p>\n<p>About Kilchoman Distillery<br \/>\nKilchoman is Scotland\u2019s only farm distillery, located on Rockside Farm on the northwestern coast of Islay. Here, the distillery grows its own barley at Machir Bay and is the only distillery on the island that grows and malts Islay barley for its whiskies. Kilchoman was founded in 2005 and sold its first whisky in 2009. Classic Islay style, known for its elegant peat smoke, yet Kilchoman also often has a hint of citrus that adds freshness. 20% of the malt is homegrown, and only Single Malts are produced \u2013 no blends. These whiskies are generally young and lively with a salt character due to peat that has been washed with seawater over centuries.<\/p>\n<p>The whisky is fermented for a minimum of four days or 50 hours. Typically, fermentation would stop here, but Kilchoman extends it to create secondary fermentation and more esters. Small stills are used for double distillation.<\/p>\n<p>Exclusive and Popular Whiskies<br \/>\nFor its most popular whiskies, Machir Bay and Sanaig, the distillery uses a combination of bourbon and sherry casks. Most casks for Machir Bay are bourbon, while those for Sanaig are predominantly sherry.
