The Florita range grew out of Velier\u2019s work in Haiti, inspired by the island\u2019s rich use of spices, citrus, and botanicals in both food and drink. According to Velier, the range draws on old recipes preserved in Herbert Linge Sr.\u2019s recipe book, and the bottle itself was designed to echo old apothecary-style containers for bitters and elixirs.<\/p>\n<p data-start=\"4638\" data-end=\"5062\"><strong data-start=\"4638\" data-end=\"4652\">Pete Panno<\/strong> is the most extreme expression in the line-up. It comes from Haiti, is bottled in <strong data-start=\"4735\" data-end=\"4745\">350 ml<\/strong>, and carries a remarkable <strong data-start=\"4772\" data-end=\"4785\">94.2% ABV<\/strong>, with <strong data-start=\"4792\" data-end=\"4813\">sugarcane alcohol<\/strong> as its base. It is produced by <strong data-start=\"4845\" data-end=\"4859\">maceration<\/strong> of citrus, bark, woods, roots, spices, and other natural Haitian botanicals. Velier also describes it as a bitter historically used in traditional Haitian medicine.<\/p>\n<p data-start=\"5064\" data-end=\"5606\">The recipe highlights ingredients such as <strong data-start=\"5106\" data-end=\"5124\">Haitian ginger<\/strong>, <strong data-start=\"5126\" data-end=\"5135\">clove<\/strong>, <strong data-start=\"5137\" data-end=\"5152\">bois cochon<\/strong> (<em data-start=\"5154\" data-end=\"5180\">Tetragastris balsamifera<\/em>), <strong data-start=\"5183\" data-end=\"5198\">liane band\u00e9<\/strong>(<em data-start=\"5200\" data-end=\"5225\">Rhynchosia phaseoloides<\/em>), <strong data-start=\"5228\" data-end=\"5243\">zo d\u2019ouvant<\/strong> (<em data-start=\"5245\" data-end=\"5264\">Eugenia crenulata<\/em>), and <strong data-start=\"5271\" data-end=\"5292\">malaguette leaves<\/strong> (<em data-start=\"5294\" data-end=\"5315\">Pimenta officinalis<\/em>). The result is a profile that feels <strong data-start=\"5353\" data-end=\"5403\">hot, herbal, spicy, and intensely concentrated<\/strong>, with strong impressions of ginger, pepper, green herbs, and clove. Retail descriptions also point to notes of black pepper, freshly cut grass, and lemon verbena.<\/p>\n<p data-start=\"5608\" data-end=\"6113\">For that reason, this is not really a bitter for casual sipping in the usual aperitif sense. Velier recommends <strong data-start=\"5719\" data-end=\"5759\">a few drops on a spoon as a digestif<\/strong>, or using it as an <strong data-start=\"5779\" data-end=\"5811\">aromatic bitter in cocktails<\/strong>.
