The nose moves through white peach, apricot and exotic nuances, while the palate is fresh, mineral and softly textured with citrus, yellow fruit and a harmonious, lightly spiced finish. It is a wine with both charm and precision, where freshness is balanced by a silky roundness.<\/p>\n

Production:<\/strong>
The wine comes from AOC C\u00f4tes de Provence and is made from organically grown grapes from Domaines Ott\u2019s own vineyards as well as selected partner growers. The core of the blend is grenache, cinsault, syrah and mourv\u00e8dre, where grenache contributes texture and fruit, cinsault adds freshness, and the darker varieties bring depth and length. The grapes are gently destemmed and crushed, left to rest overnight at cool temperatures before skin contact is ended, and then vinified separately in stainless steel tanks before the final blend is assembled.<\/p>\n

The wine is made from a classic yet contemporary Provence blend: 30 percent cinsault, 30 percent grenache noir, 30 percent syrah and 10 percent rolle. Its pale colour is achieved through careful selection of the best juices and ageing on the lees, while fermentation takes place at 16\u201318 degrees Celsius to preserve the aromas. After a short period on the lees, the final blend is made, resulting in a wine with fruit, floral notes and spicy finesse.<\/p>\n

AIX is made from grenache, syrah and cinsault grown in high-altitude vineyards in Provence, around 420 metres above sea level. The mineral-rich soils, the high number of sunshine hours and the cooling mistral winds all contribute freshness and concentration to the fruit. The grapes are harvested during the cool night and early morning hours to preserve aromatics and freshness, and the wine is fermented and aged in temperature-controlled stainless steel tanks to maintain its pure and lively character.<\/p>\n
