The nose is marked by sweet, ripe floral notes and green fruit. After picking early in the morning, the still-cool bunches are taken for destemming and pressing. Fermentation takes place at a low, controlled temperature to preserve the fresh fruit character of the grapes in the finished wine.<\/p>\n Transporting wine in bulk from the country of origin to be bottled in Denmark results in a significantly reduced CO\u2082 footprint compared with importing wine already in bottle. In recognition of this lower CO\u2082 impact \u2013 as well as the quality assurance and economic advantages \u2013 bulk wine represents a growing part of our business.<\/p>\n Since the turn of the millennium, Diamond Hill has been a hallmark of quality wine. The people behind Diamond Hill wanted to show that Australia can offer far more than just Shiraz \u2013 in fact, the vast continent can boast more than 70 different grape varieties.
