Otima is new thinking within port wine, and already the beautiful and different bottle type signals that they want to do away with the slightly stereotypical notions about port wine. The clear bottle makes the contents look like liquid amber and if you serve it lightly chilled, you get a fresh and delicious enjoyment with a taste of mandarins, powdered sugar, apricots and nuts. The fermentation process has lasted for 48 hours and has taken place exclusively using the naturally occurring yeast cells, and the fermentation is stopped by adding 77% pure grape alcohol in the ratio one to four. Thus, a large part of the natural residual sugar content is preserved. The age indication is 10 years, which means that the average storage of different vintages gives a style like a 10-year-old Tawny, and the actual storage is done on oak barrels (pipes) in the cellars of Vila Nova de Gaia. Golden brown (tawny) color and a good aroma of dried fruit and walnuts. The taste is almost creamy, but still fresh with shades of nuts and powdered sugar.
