Don Papa Sherry Casks is in 18 months posted on four different types of Sherry-Fade: Fino, Pedro Ximenez, Cream and Palo Cortado. Before the row ends on Sherry-Fade, it has only spent four years on Ex-Bourbon dishes. The room from the four sherry dishes is carefully assembled for the blend you find in the bottle.
It is a relatively dry room with natural sweetness. The scent differs from the taste by bidding on fruity tutti-frutti aroma. You will find both fragrance and taste of nuts, over mature apple and citrus. The taste is natural and sweet with a good alcohol strength (45%) that harmonize well with the taste elements.
Sherry is manufactured in Spain and is a popular wedding type in line with Port Wine and Madeira. These vint types are added to neutral spirits after fermentation, which means they contain more alcohol than regular wine. Back in history it started adding brandy to wines to be exported, to avoid being bad on the long journey to, for example, England, which was previously the main market for the export of Sherry. Sherry therefore keeps an alcohol percentage of between 14-20% and is available in both sweet and dry versions. A good sherry typically tastes of raisins, figs, nuts, apricots and caramel taste elements that work well with eg Rome.
