The scent has unmistakable tones of plums and raisins. The taste is smooth with a light sweetness that covers the alcohol and gives the brandy a comfortable and rounded aftertaste.

The wine distilled is taken from a Solera started in 1984. Distently distilled on a pot set before the sprite is poured onto used chestnuts where it stores for a minimum of 12 years.

Ximenez spinola The winerium was founded in 1729 by Phelipe Zarzana Spinola, and from the outset it was dedicated to producing Pedro Ximenez exclusively. At that time, the vineyard tapped the wine under the name of Zarzana Spinola, but since this name was something of a challenge, not to say an impossibility of pronouncing in English, demanded a great English customer that you changed this to Ximenez – Spinola, which one subsequently have done. Today, only wines are made on Pedro Ximenez, and although you are still extremely traditional in her vinification, you try to experiment with the grape type, so you do not only make Sherry. An example is the Late Harvest, which is the only one of its kind in the district. The absolutely exceptional at Spinola Brandy Criaderas is the use of chestnut in storage. Until the Spanish Civil War in 1939, there was a tradition of using chestnut in Spain, but since a large part of the forest areas were felled during the war, the Bødkerne subsequently took increasingly over to use American oak tree to finally completely cease the use of chestnut tree. The fades at Bodegas Spinola are all at least 70 years old and therefore only gives an extremely limited amount of tannin, which helps to give the brandy a rounder and softer taste.
