Bodegas Pequeños Cava Brut Ecológico is an organic, dry ‘blanc de blancs’ cava that has been created on the basis of the chardonnay and macabeo grapes.
Cava covers the Spanish sparkling wines made with duck fermentation in the bottle – just like its very famous French model, whose expensive lawyers are quick on the trigger if you mention the place name in the comparison, which sounds like a contraction of ‘slush’ and ‘ campaign’. Then everyone should join in, without anyone feeling overly ridiculed or trademarked.
The organically grown grapes are picked slightly underripe, so that they partly preserve the acid that is so important in sparkling wine and at the same time ensure that the alcohol level does not run wild during the second fermentation, where the bubbles are simultaneously conceived in the bottle.
The aroma and taste offer an unpretentious taste in a dry sparkling wine with a fresh, crisp profile that aromatically goes in the direction of green apples, citrus and slightly ‘toasted’ yeast notes. The bubbles are pleasant and the finish more than matches the wine’s level of ambition.
Cava is undeniably a lovely wine for glasses, but also remember that it is a versatile food wine that can be enjoyed throughout an entire meal.
