Classic Cava – Spain
Crisp sparkling wine from the north-eastern corner of Spain. Here in Penedes, some of the best sparkling wines in the world are produced. Made in the traditional method, just like Champagne.
The area and the producer:
This Cava is produced in the classic Cava town of Sant Sadurni D’Anoia, in the heart of Penedes. Cava has been produced here since 1882 and they are considered among the leading producers. The classic grapes are used for Cava and the extended storage in the bottle helps to give the product finesse and elegance.
The wine:
The wine is made from the following grape varieties: Macabeo, Xarel-lo and Parellada, which thrive in the area’s clay, granite and calcareous soil. When the grapes are harvested in September, only the very best are selected for Cava production. The wine is stored deep in the house’s cellars and has the important second fermentation in the bottle. It gives nice, stable bubbles in the bottle.
In the glass:
Clear straw color in the glass with a stream of small bubbles. Fine aromas rise easily with notes of pear, straw and a little yeast from the bottle aging. The taste is finely balanced with pure fruit character and a mousse that sits nicely on the tongue.
Ideal as an aperitif, or as an accompaniment to light fish dishes and seafood.
