From farm-to-table whisky. This whiskey was distilled from the distillery’s own harvest of barley in 2011, 2012 and 2013. It was then aged in 29 bourbon casks and six oloroso sherry casks for a minimum of eight years.

About Kilchoman Distillery
Kilchoman is Scotland’s only farm distillery and is located at Rockside Farm on north-west Islay. Here the distillery grows its own grain at Machir Bay, and is also the only distillery on the island that both grows and malts grain from Islay for the distillery’s whiskies. Kilchoman was founded in 2005 and in 2009 sold its first whisky. It is classic Islay with a clear, elegant touch of the peat smoke that Islay is so loved for. What is unique about Kilchoman, however, is that the distillery’s whiskeys often have a slight hint of citrus, which gives a touch of freshness to the dram. 20% of the malt is from our own barley, and we only make Single Malts – i.e. not whiskey for blends. In general, these are whiskeys that can and should be drunk young and themselves have a touch of being fresh and alive with a salty touch. This is because the peat has been flooded with salt water for centuries.

The whiskey ferments for a minimum of four days or 50 hours. Fermentation then dies and it is at this point that most distilleries stop fermentation. Kilchoman continues longer, creating a secondary fermentation and more esters. They use small stills and double distill.

Exclusive and popular whiskies
For the distillery’s two most popular whiskies, Machir Bay and Sanaig, a combination of bourbon and sherry casks is used. Where most of the casks for Machir Bay are bourbon casks, most of the casks for Sanaig are sherry casks. Both whiskeys are 46% and have neither added caramel nor are chill-filtered.
