Delicate and elegant beauty
Rully Rouge – Le Bas des Chènes is characterized by a delicate and elegant cherry fruit, supported by subtle mineral notes and a straight tannin structure. The wine is beautiful, complex and harmonious with lots of crispness and fruit character. In the bouquet, it is deep, intense and full of dark, red berries.
Gentle harvest
Maison Albert Sounit has been buying grapes from the Les Chènes field since 2008. In 2013, the winery bought the 2 ha mar, and as the sole owner of the plot, it can also be called Monopole. The soil of the sloping Les Chênes field is almost entirely composed of lime, which contributes to the fine fruit and elegant finesse that characterizes Rully Rouge – Le Bas des Chênes.
The age of the Pinot Noir vines is around 35 years, and thanks to heavy pruning, the harvest yield has been kept down to around 40 hl per ha, to thereby ensure a natural concentration.
The grapes are hand-picked and go through sorting with subsequent de-stemming upon arrival at the winery.
Vinification: Barrel aged 12 months.

Vinification
Vinification starts with a cooling of the grapes to approx. 9-10 degrees, where the grapes go through a cold maceration for 5-7 days. Here, the delicate fruit aromas and the color pigment are extracted. Subsequently, the temperature is raised and the alcoholic fermentation lasts around 7-9 days. The wine macerates together with grape skins and grape flesh for 3-4 days, before the wine is poured into barrels and stored for 12 months. The dishes used, 40% of which are new, are of different sizes; 228, 300 and 500 litres, to balance the character in the barrel in relation to the fruit in the wine.
Maison Albert Sounit
The winery was originally called Domaine Bernollin, and with its 14 ha of vineyards in Montagny and Rully was bought by Knud Kjellerup and his Bourgogne house Maison Albert Sounit in 2005. Immediately after the purchase, production was restructured in respect of the environment. Today, production takes place according to the rules covered by the Agriculture Raisonée, with a view to being organically certified in the coming years. Thus, only natural and organic fertilizers are used on the fields.
Maison Albert Sounit buys grapes from several appellations in the Côte Chalonnaise. These grapes are harvested as widely as possible by the domaine’s harvest team, and all the grapes are vinified on the farm in Jully-les-Buxy according to the same philosophy as Domaine Albert Sounit’s own grapes. All grapes for Crémant de Bourgogne as well as the grapes for white and red Burgundies are harvested by hand. During fermentation, only the grapes’ natural yeast is used. Bottling of the house’s white and red Burgundies takes place without filtration.
